An Australian café chain that opened its first café in New York in 2013. Founder Nick Stone is a Melbourne native and former AFL player, and the name comes from the bluestone-paved laneways of his home town. Its blends are roasted at its own facility in Brooklyn, and the aim is to bring “Melbourne’s coffee culture” to New York’s sidewalks.

We list eight of its cafés in the cities we cover: Tribeca in New York; Financial District, Rincon Hill (Avery Lane), Theatre District, Marina and SoMa in San Francisco; and Old Towne Orange and San Clemente in Orange County.

Order: flat white (made with its Maverick blend), avocado smash, gluten-free banana bread. Some San Francisco cafés list a draught flat white.
